Onlangs is het boek Chocolate – the reference standard/the chocolate tester 2015 van Georg Bernardini verschenen.
In deze ‘chocoladebijbel’ behoor ik tot de 25 beste chocolatiers van de wereld te behoren met de maximale rating van 6 bonen/sterren.
Conclusie volgens Bernardini: Alexandre is one of the Top Confideurd and the tasting provided a lot of pleasure. The Bean-to-Bar chocolates will reach this high level, I am convinced of this. Currently the quality still fluctuates between 5 and 6 cacao fruits. as the tendency is, however, quite clearly going towards 6 cacao fruits, I am awarding premature praise and the highest rating.
